Ingredients for 4 servings:
- 100 g bacon, lean, diced
- 2 onions, diced
- 500 g potatoes, diced
- 150 g carrot(s), diced
- 200 g zucchini, diced
- 1 bell pepper(s), green, diced
- 1 stalk(s) leek, sliced
- 2 sprigs savory
- 1 bunch of parsley
- salt and pepper
- broth
- Oil (pumpkin seed oil)
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Brown the bacon and onions, add the chopped vegetables and potatoes, and sauté. Add 1.5 to 2 liters of water and season. Cook in a pressure cooker for about 10 minutes; it will take longer in a regular pot. When the vegetables are easy to mash, remove the savory and purée the soup. A dash of pumpkin seed oil on the plate completes the dish. Enjoy!
