Bionade jelly

Ingredients for 6 servings:

  • 2 small bottles of Bionade of your choice, preferably elderberry
  • 6 tbsp sugar
  • 8 tbsp lime juice
  • 8 sheets of gelatin
  • Water, cold for soaking
  • 250 g fruit of your choice (e.g. blueberries)
  • 225 ml buttermilk
  • 2 tbsp lime zest, untreated, grated
  • 2 tbsp lime juice
  • 200 ml whipped cream
  • 1 packet of vanilla sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 15 minutes

Soak the gelatin in cold water. Heat the Bionade with the sugar and lime juice and dissolve the squeezed gelatin in it. Divide the washed berries into 6 molds or glasses and fill with the Bionade mixture. Refrigerate for at least 6 hours. Mix the buttermilk, lime zest, and 2 tablespoons of lime juice. Whip the cream with the vanilla sugar until stiff and mix into the buttermilk. Serve the jelly with the buttermilk cream.
