Ingredients for 1 servings:

  • 4 handfuls of leaves (birch leaves)
  • 1 kg sugar
  • 1 ⅛ liter of water
  • 1 lemon(s), the juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

vegan, vegetarian, makes about 5 bottles or glasses of 225 ml capacity

Wash the birch leaves, drain them, and bring to a boil with the water in a large pot. Simmer gently for about 5 minutes. Strain and collect the liquid. Return the liquid to the pot with the same amount of sugar (1:1 ratio) and bring to a boil. Simmer gently for another 5 minutes. Then pour into 5 small bottles or 225 ml jars and seal them immediately. This syrup can be mixed with mineral water at a 1:4 ratio, added to tea, or drizzled over pancakes.
