Bitter lemon jam

Ingredients for 6 servings:

  • 500 g lemon(s) (bitter lemons, Poncirus trifoliata)
  • 200 g quince(s), alternatively apples or pears
  • 500 g water, alternatively apple juice
  • 200 g apple juice
  • 500 g gelling sugar 2:1

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

With Thermomix

Wash the bitter lemons thoroughly, quarter them, and remove the numerous pips. Cut the flesh, including the peel, into small pieces. I do this with kitchen scissors. The lemon oil makes the utensils a bit sticky. Cut the cored quince into pieces, add the water and apple juice, and cook everything on level 3 at 100°C for about 10 minutes until soft; it will still be a bit chunky. You can also cook for 15 minutes, which will give it a more mushy consistency. Then add the gelling sugar and cook on level 5 at 100°C for 10 minutes. While still hot, fill jars with the jam.
