Ingredients for 4 servings:

  • 45 ml lime juice
  • 1 tbsp ginger, finely chopped
  • 1 tsp honey
  • 60 ml olive oil
  • 1 tsp salt
  • ¼ tsp pepper, freshly ground
  • 480 ml beans, black, drained and rinsed
  • 1 mango(s), diced
  • ½ onion(s), red, thinly sliced
  • Mint, fresh, chopped

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Combine the lime juice, ginger, and honey, then whisk in the olive oil. Mix the beans, mango, and onion in a bowl. Pour the salad dressing over the mixture and fold it in. Refrigerate for one hour. Add the mint before serving.
