Ingredients for 2 servings:
- 2 large slices of farmer’s bread or rye bread
- 8 slices of Black Forest ham
- 1 large carrot(s)
- 1 piece(s) celery of your choice
- ½ cup natural yogurt
- 1 tsp, heaped sugar
- 1 tsp lemon juice
- some salt
- some remoulade or butter
- 2 small tomatoes
- some parsley leaves (flat parsley)

Carrot salad meets Black Forest
For the carrot salad, finely grate the carrot and, if desired, a piece of celery. Place the grated carrot in a bowl and mix well with the sugar, lemon juice, a little salt, and the yogurt, then set aside. You can also add some chopped parsley if you like. Place the two slices of bread on a serving board and spread with remoulade. You can also use butter if you like. Now place four slices of Black Forest ham on each slice of bread. Place the carrot salad on top in heaps. Cut the tomatoes into small wedges and arrange them decoratively on the bread. Serve garnished with the parsley leaves. No other seasonings are needed—all the ingredients develop their full flavor when combined. You can prepare the carrot salad well in advance, but this isn’t necessary, as the full aroma develops in just a short time. This rustic yet sophisticated snack is particularly popular with us in the summer.
