Black Forest toast with chanterelles and bacon

Ingredients for 8 servings:

  • 8 slices of toast
  • 150 g Emmental cheese, grated
  • 75 g bacon
  • ½ onion(s)
  • 100 g crème fraîche
  • 1 jar chanterelles (155 g drained weight)
  • e.g. salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Preheat the oven to 175°C fan/convection oven. Place 8 slices of toast on a rack lined with baking paper. Drain the chanterelles in a colander. Small chanterelles are best, but larger ones are better if chopped. Dice half an onion. Mix the diced onion, bacon, chanterelles, 100g Emmental cheese, and the crème fraîche. Season to taste with salt and pepper. Spread the mixture on the toast and sprinkle with the remaining Emmental cheese. Bake for about 10 minutes, until the cheese is golden brown.
