Blackberry jam "Caribbean style" with coconut milk and bananas

Ingredients for 1 servings:

  • 500 g blackberries
  • 400 g coconut milk
  • 100 g banana(s)
  • 1 cl lime juice
  • 500 g gelling sugar 2:1

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Rinse the jars with hot water, boil the lids for 2 minutes. Combine the blackberries with coconut milk, freshly squeezed lime juice, and chopped banana, and puree everything with a hand blender. Add the gelling sugar and cook according to the package instructions. Pour into the jars while still hot and seal with the hot lids.
