Blackberry liqueur for boiling

Ingredients for 1 servings:

  • 1 ½ kg blackberries
  • 1 ½ liters of water
  • 1 ½ kg rock candy
  • 1 ½ liters of schnapps (grain spirit from 38%)

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Boil blackberries with water and rock candy. Once cooled, pass through a food mill or puree, then top up with the cornstarch. I personally strain the mixture through my Rösle sieve (it’s especially fine) and then bottle it. It also tastes great in sparkling wine or Cava. It’s easy to scale up or down, as the quantities remain the same. For example: 500 g blackberries, 500 g rock candy, 0.5 L cornstarch, and 0.5 L water.
