Blackberry red wine jelly

Ingredients for 4 servings:

  • 1 kg blackberries
  • 700 ml red wine, semi-dry
  • 1 vanilla pod(s)
  • 1 cinnamon stick(s)
  • 1 packet of gelling sugar 2:1
  • some lemon juice

Instructions

Working time approx. 15 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 40 minutes; Total time approx. 4 hours 55 minutes

Scrape out the vanilla pod. Simmer the seeds and pod, cinnamon stick, blackberries, and red wine in a saucepan for about 30 minutes. Then remove from the heat and let cool. Pour through a fine sieve back into a saucepan. Cook with preserving sugar and a little lemon juice according to the package instructions for the preserving sugar. Pour into jars while still hot.
