Among the many winter preserves, green onions are not in last place. Fresh in the refrigerator, they do not last long and quickly begin to disappear. But it can be stored frozen, dried, or pickled – so you will always have access to a useful vegetable.

How you can store green onions for the winter in the refrigerator

If you do decide that the refrigerator is the only place where you can store green onions, then remember – onion feathers will not lose their freshness for 2-3 weeks at 3-4 ° C, but once you lower the temperature to 0 ° C – onions can be stored for 1 month. Keep the vegetable in the refrigerator you can:

  • in plastic bags – puncture a few holes for ventilation, fold unwashed onions, and store on the vegetable shelf;
  • in the cloth – dip the onion with the root in water, then wrap in rags, wrap in paper, tie with tape, and put in a bag;
  • in jars – wash the onions, dry them, put them in jars, and close them with Capron lids;
  • in the paper – wash the onions, dry them, wrap them in the paper, and put them in the refrigerator.

All these ways will help you safely store onions for 1-1.5 months. The main thing is to watch the temperature in the refrigerator and not stock damaged feathers, but take only fresh vegetables.

How to properly freeze onions for the winter

Many housewives choose to freeze onions as the most successful option for winter preserving such a vegetable. You need to wash and dry it, and then choose the most appropriate method:

  • chop the onion, boil it in boiling water for three minutes, flip it on a colander, cool it, put it in containers, and put it in the freezer;
  • roast whole feathers for 2-3 minutes in a pan, put in containers, and put in the freezer;
    chop washed and dried feathers, blanch for 2-3 minutes, put in a colander, cool down, put in containers, and put in the freezer;
  • simply put the chopped onion feathers into containers and freeze as such.

You can also chop onions, put them in silicone molds, pour water over them, and put them in the freezer. When the molds freeze, take them out and put them in bags – this way the onions are easier to store and use.

How to make dried green onions for the winter

The first option for drying onions is outdoors. You first need to wash them thoroughly and dry them on paper in a warm room. It is important to make sure that the onions do not get direct sunlight – from this, all the useful properties of onions will escape. Determining the degree of dryness of the onion is simple – if it crumbles between your fingers, then the job is done. At this stage, it can be poured into jars, closed with lids, and stored in the kitchen. This method of drying green onions takes about a week.

The second option for drying onions is in the oven. Naturally, this is much faster. You need to wash and dry onions, then chop them and pour them into a container that is suitable for the oven. Set the temperature to 100 ° C and dry the onions for 3-4 hours. During all this time you will need to stir the onions in the container several times. At the end of time, it is better to pour the vegetable into dry plastic containers or glass jars.

Green onions with salt for the winter – recipe

Onions harvested in this way can be used to make soups, salads, or side dishes. For one kilogram of onions, you need to take 200 grams of salt, wash, dry the vegetable, then chop and mix with salt. The resulting mass is tightly tamped in jars to release the juice. Green onions with salt should be stored in a dark cool place.

You can also make green onions for the winter in oil – this is another very interesting preparation. The vegetable in this case should be washed, dried, chopped finely, and placed in glass jars. Take into account that 1 / 4 parts of the jar should remain unfilled. Up to the edge of the container you pour the vegetable oil, close the jars with lids, and put them in the refrigerator.
