How to Cook Meat and Fish: in What Water to Put and When to Salt

Meat is one of the main ingredients in many dishes, unless, of course, one is a vegetarian. It can be stewed, boiled, or made into a broth.

What water to put meat in – tips

Before boiling meat, it should be rinsed in running water.

One of the questions that may arise is what water to put the meat in. It depends on what it is being boiled for. For example, cold water is needed for broth or soup, while boiling water is needed for salads, slices, and other prepared foods.

If you start boiling the meat in cold water, then most of the useful substances will go into the broth. But if you put pork, chicken, and beef in boiling water – useful micronutrients will remain in the meat due to the fact that the top layer of proteins quickly curdle from the high temperature and do not let them “flow out” into the water.

Remember that you need to pour cold water on the meat broth if you want it to turn out flavorful and rich. That said, put all the ingredients for the broth in the pot at the very beginning. But if the main purpose of the future dish is the meat itself, it can be poured with boiling water. Then it will turn out juicy and flavorful.

When to salt meat when boiling or braising

Sauté the meat when boiling at the end. Salt increases the secretion of liquid and that can spoil the taste. If you add salt at the beginning, the meat is too dry and tough.

In this case, the same principle applies to meat – if you want a tasty broth or soup – fish is recommended to pour cold water and then put it on the burner. If your task is to preserve the taste of the fish, then it should be put into hot water, but not into boiling water. If you throw it into the boiling water, it will quickly boil on the outside, but remain raw inside.
