Summer Rolls With Vegetables And Tofu

Vegan appetizers contain a lot of vegetables and thus also a lot of vitamins, minerals as well as secondary plant compounds.

Ingredients For 4 People

What you need:

  • 12 pieces Rice paper plates
  • 150 g Tofu
  • 150 g Glass noodles
  • Vegetables of choice: e.g.: carrot, asparagus, cucumber, avocado, bell pepper
  • Soy sauce
  • Sesame

Preparation

  1. Tofu and vegetables
    Cut tofu into oblong strips. Cook vegetables if needed. Then also cut into oblong strips.
  2. Glass noodles. Prepare according to package directions. Usually, the glass noodles need to be soaked in hot water for a few minutes.
  3. Rice paper sheets and warm water. Fill a shallow bowl with lukewarm water. The rice paper plates should fit in completely. Now completely submerge one plate in the water and then place it on a large plate. Allow soaking briefly.
  4. Soaked rice paper, tofu, glass noodles, vegetables, and sesame seeds. Place the vegetables, tofu, and glass noodles in the center of the soaked rice paper. Sprinkle some sesame seeds on top. Then roll up tightly like a wrap.
  5. Rice paper sheets, tofu, glass noodles, vegetables, and sesame seeds. Repeat the process for the other summer rolls.
  6. Summer rolls and soy sauce. Dip the summer rolls in the soy sauce and enjoy.

TIP: The summer rolls are not only delicious with soy sauce, but also with a peanut dip and a few squeezes of fresh lime.
