Blue wine cheese sauce with mushrooms

Ingredients for 4 servings:

  • 150 g blue cheese (Castello)
  • 200 g whipped cream
  • 100 ml white wine
  • 2 egg yolks
  • 400 g mushrooms, small
  • 1 garlic
  • Salt and pepper, white
  • butter

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat the cream with the crushed cheese and crushed garlic, stirring constantly, until creamy. Season with white pepper. Stir in the white wine and fold in the egg yolks. Do not return to a boil! Sauté the mushrooms in a pan with butter. Serve with tagliatelle or gnocchi and a mixed salad.
