Blueberry-coconut jam

Ingredients for 1 servings:

  • 1 kg blueberries
  • 400 ml coconut milk, unsweetened
  • 2 packets of vanilla sugar
  • 1 lime(s), juice
  • 1 pack of gelling sugar 2:1

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Wash the blueberries and place them in a large pot. Mix with coconut milk, vanilla sugar, lime juice, and preserving sugar. Bring to a rolling boil, then puree after a few minutes if necessary. Check the setting time and pour into prepared jars. This will make enough for 6 regular-sized jam jars.
