Blueberry Cookies

Ingredients for 1 servings:

  • 125 g blueberries
  • 125 g butter, soft
  • 175 g sugar
  • pinch(s) of salt
  • 1 tbsp vanilla sugar
  • 1 egg(s)
  • 200 g flour
  • 1 tsp baking powder
  • Baking paper

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

for about 20 cookies

First, preheat the oven (electric oven: 175°C/ fan oven 150°C). Then, wash and drain the blueberries. Combine the butter, sugar, vanilla sugar, and a pinch of salt and beat until creamy using the whisk of an electric mixer. Add the egg. In a second bowl, mix the flour and baking powder. Then stir this into the egg, butter, and sugar mixture. Finally, fold in the blueberries. The dough will then have a very sticky consistency. Scoop out small mounds with a tablespoon and place them, spaced apart, on a baking sheet lined with baking paper. Lightly flatten the mounds. Place the sheet in the oven for 10-15 minutes. They’re done when the edges are golden brown and the center is still slightly soft. Let the cookies cool briefly on the sheet, then transfer them to a wire rack and let them cool completely.
