Blueberry-currant fruit spread / jam

Ingredients for 1 servings:

  • 500 g blueberries, cleaned
  • 400 g currants, cleaned
  • 1 lime(s), organic (juice and peel)
  • 60 ml syrup (blueberry syrup)
  • 3 tsp vanilla sugar
  • 500 g gelling sugar, 2:1

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

very fruity spread with lime and blueberry syrup

Place the hulled blueberries and currants, the grated zest and juice of the organic lime, the syrup, and the vanilla sugar in a large saucepan. Carefully stir in the gelling sugar. Place the pan on the stove and heat the contents. Blend using a hand blender. Boil gently for about 4-5 minutes. Fill hot, rinsed twist-off jars to the brim, place the lids on, and screw on tightly. Turn upside down for about 3 minutes. Optional: If you don’t like the currant seeds in your spread, you can strain the mixture through a sieve after blending (but before bringing to a boil).
