Blueberry-Lemon-Marmalade

Ingredients for 1 servings:

  • 1,000 g blueberries, fresh
  • 1,300 g sugar
  • 2 large lemon(s), zest and juice
  • 170 ml pectin, liquid

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

In a large saucepan, combine the blueberries, sugar, lemon zest, and lemon juice and bring to a boil while stirring. Set aside briefly, stir in the pectin, and bring back to a boil. Continue simmering for about 1-2 minutes, remove from the heat, and pour into sterilized screw-top jars while still hot. I made 9 250ml jars. If you only have powdered pectin, add it according to the package instructions.
