Bohemian potato dumplings

Ingredients for 4 servings:

  • 700 g potatoes, waxy
  • 200 g flour
  • 1 m.-sized egg(s)
  • 100 g semolina
  • 40 g butter
  • nutmeg
  • Salt
  • pepper
  • Paprika powder
  • 20 ml milk

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Boil the potatoes. Peel the skins and let them cool. Press the potatoes through a potato ricer into a large bowl. Add the flour, semolina, and egg, but don’t knead them yet! Melt the butter in a pan and add it to the potatoes. Add the milk. Add the spices and knead the mixture thoroughly. Season to taste and add a little more salt or nutmeg if necessary (depending on the type of potato). Bring a large pot of water to a boil. Using wet, cold hands, shape the dough into medium-sized dumplings and place them in the boiling water with a slotted spoon. Let the dumplings remain in the boiling water for about 15-20 minutes. Remove the finished dumplings with a slotted spoon and serve on a flat plate. They are best as a side dish to all kinds of roasts and red cabbage. Important: Never serve dumplings in a bowl, as they would stick together.
