Bolognese sauce

Ingredients for 4 servings:

  • 100 g bacon, diced
  • 1 onion(s), diced
  • 1 carrot(s), grated
  • 1 small celery, grated
  • Garlic
  • 400 g minced meat
  • ⅛ liter red wine
  • 1 cup vegetable broth or beef broth
  • 400 g tomatoes, peeled
  • Parsley
  • Pizza seasoning
  • Tomato paste
  • salt and pepper
  • possibly tomato(s), pureed
  • possibly soup seasoning

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 40 minutes; Total time approx. 2 hours

Fry the bacon cubes in a little olive oil, then add the finely chopped onion and garlic, along with the carrot and celery (finely grated with a grater), and sauté. Remove the entire mixture from the pan and set aside briefly. Then fry the minced meat in a little olive oil until it turns brown. Season with a little salt and pepper, and pour in 1/8 l red wine. Allow the red wine to reduce over medium heat. Then pour in a little broth and add the peeled tomatoes. Again, let the liquid evaporate and mash the tomatoes with a wooden spoon. It’s easier to add 1 pack (500 g) of passata instead of the soup and peeled tomatoes. However, you should then add some soup seasoning to the entire mixture. Then add freshly chopped parsley, oregano, a little tomato paste, salt, and pepper, and simmer over low heat for about 1 hour. Stir occasionally. Season with pizza seasoning if desired. This Bolognese sauce is perfect for spaghetti or as a lasagna sauce. It’s worth making double or triple the amount, as it freezes well.
