Philadelphia cake with cherries

Beat the egg whites with salt until stiff, gradually adding the sugar. Whisk the egg yolks and fold in. Make up the pudding mix with flour to a total of 100g and then fold in. Then bake for 15-20 minutes at 200°C. Mix the cream cheese with the powdered sugar and milk and spread on the cooled base. Sprinkle the chopped almonds (or nuts) over the top. Whip the cream with the cream stiffener until stiff and spread on top. Drain the cherries and arrange it on top of the cream. Make a glaze with the cherry juice and the cake glaze powder. Pour this over the cream while it’s still warm. This creates the “brain twists.”
