Ingredients for 4 servings:

  • 2 large cucumbers
  • 1 m.-sized onion(s)
  • 1 garlic clove(s)
  • 1 cup sour cream, fine
  • 1 tbsp margarine
  • 2 sprigs of parsley
  • some vegetable broth, instant
  • some salt and pepper
  • some sugar or liquid sweetener

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Light and delicious

Dice the onion and sauté it in the margarine in a saucepan. Meanwhile, peel and thinly slice the cucumbers. Dice the garlic. When the onions become translucent, add both, cover, and simmer over medium heat, stirring occasionally. As soon as the cucumbers become translucent, add the sour cream, finely chop the parsley, and stir in. Season with granulated stock, salt, pepper, and sugar, and bring to a boil briefly. Serve the braised cucumbers with mashed potatoes.
