Breaded coconut pears with Camembert

Ingredients for 4 servings:

  • 2 pear(s), not too soft
  • 1 tsp lemon juice
  • 3 tbsp desiccated coconut
  • 1 tsp pepper, crushed
  • 2 egg whites
  • 30 g clarified butter
  • 200 g Camembert(s), mild (ripe)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 23 minutes

Peel and core the pears, and slice them into wedges. Drizzle with lemon juice. Mix the coconut flakes with the ground pepper, then lightly beat the egg whites. Toss the pear slices first in the egg whites, then in the coconut flakes. Melt the clarified butter in a sufficiently large pan. Fry the breaded pear slices for about 1 minute on each side. Thinly slice the Camembert and arrange the baked pear slices on top. Tip: Serve with a red wine from the South of France or a red port.
