Ingredients for 2 servings:
- 200 g feta cheese
- 1 egg(s), beaten
- some breadcrumbs
- ½ onion(s)
- 1 tomato(s)
- some basil, fresh
- 2 handfuls of arugula
- Balsamic vinegar (Crema di Balsamic vinegar)
- 2 tsp Parmesan, grated
- olive oil
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Cut the feta cheese into four equal pieces. First coat the pieces in the beaten egg and then in a little breadcrumbs. Repeat this process once. Fry the breaded feta pieces in hot olive oil for about 3-4 minutes on each side until golden brown. Wash and spin the arugula, then divide it between two plates. Drizzle with the balsamic vinegar and sprinkle with the Parmesan cheese. Peel and dice the onion. Wash the tomato, remove the seeds, and also dice it. Finely chop the basil. Arrange the grated feta cheese on the bed of arugula and serve sprinkled with the onions, tomatoes, and basil.
