Ingredients for 2 servings:
- 500 g pork, slices of ham
- 200 g breadcrumbs
- 100 g flour
- 2 eggs
- some salt
- 1 dashes lemon juice
- 200 g vegetable fat
- 4 egg yolks
- 2 tbsp dry white wine
- salt and pepper
- 1 pinch(s) of sugar
- 150 g butter
- some lemon juice
- 1 tbsp tomato paste
- 1 tbsp crème fraîche
- 4 tsp sambal oelek
- 1 pinch(s) of Fondor
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Pound the meat with a meat tenderizer and then sprinkle both sides with salt. Place the eggs and breadcrumbs in two deep plates. Mix the eggs with a fork. Heat the vegetable oil in a deep frying pan, do not overheat. First coat the meat in flour, then dip it in the egg, and finally coat it in breadcrumbs. Fry in the hot vegetable oil for about 2 minutes on each side. Then arrange on a plate and drizzle with lemon juice. Sauce: Whisk the egg yolk, salt, wine, and sugar in a metal bowl. Heat the water until just before boiling and place the bowl on top. The bowl should just touch the surface of the water. Whisk the egg until creamy, stirring constantly. Meanwhile, melt the butter and slowly add the melted butter to the egg, stirring constantly. Pour the sauce into a saucepan and mix over low heat with the crème fraîche, tomato paste, lemon juice, pepper, sambal oelek, and fondor. Pour the sauce over the meat and serve. It goes well with salad and potatoes, potato wedges, etc.
