Ingredients for 1 servings:

  • 400 g brioche (yeast plait)
  • 3 eggs
  • 250 ml milk
  • 40 g sugar
  • 80 g dried apricot(s) (chopped)
  • 2 apples
  • 2 tbsp apricot schnapps (brandy)
  • ½ tsp cinnamon
  • 40 g butter
  • 4 tbsp sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 50 minutes

Cover the raisins with brandy and let it steep for 1 hour. Cut the brioche into 0.5 cm thick slices, mix the milk and eggs, then pour over the brioche slices and let it steep for about 10 minutes, stirring a few times to soak the slices; no liquid should remain. Stir in the sugar, salt, chopped apples, cinnamon, and the apricots with the brandy. In a large non-stick pan, heat the butter, add 4 tablespoons of sugar, and cook until lightly browned. Then add the brioche mixture. Reduce the heat and bake the pancake until golden brown (about 8-10 minutes), breaking up the brioche mixture a little and turning it a few times. Serve with any compote you like.
