Grilled pineapple skewers with a sugar-tequila glaze

Ingredients for 6 servings:

  • 60 ml Tequila, golden
  • 120 g brown sugar
  • 1 ½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 1 large pineapple

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Soak 6 wooden skewers in water for about 30 minutes. Mix the tequila, sugar, vanilla extract, and cinnamon well in a bowl. Cut the top of the pineapple core off the pineapple and then trim the sides while it is standing. Halve and quarter the pineapple, then cut out the core in the middle. Then cut into cubes about 2 cm wide. This works best if you halve the quarters you have again. Now place the cubes close together on the skewers; I always use 8-9. Stir the glaze again well and place the skewers on the hot grill. It is best to do this on the edge where it is not as hot and the grill surface should be clean. Now coat the skewers with the glaze, turning until all sides are covered. Leave them on the grill, turning them frequently until the glaze/pineapple is golden brown. Remove from the skewers and serve warm on dessert plates. A scoop of vanilla ice cream goes really well with them.
