Broccoli Cream Soup

The perfect broccoli cream soup recipe with a picture and simple step-by-step instructions.

  • Broccoli leftovers with stalk
  • 300 Milliliters Broccoli broth
  • 200 Size Cream
  • 1 Tablespoon Flour
  • 1 tablespoon Butter
  • 1 Teaspoon. Thai curry paste green
  • 1 small Meat sausage (Lyoner) skinned into thin slices
  • 1 small Garlic clove
  • 1 disc Ginger
  • Bio lemon zest something
  1. I still had leftovers from the “broccoli casserole” what to do?
  2. Heat the broccoli stock and pour some of it into a tall container. Add the broccoli florets and purée finely with the mixing stick. Put all of this back into the broth, season to taste, stir in the teaspoon of curry paste, add the lemon zest. Then I pull myself a “Velouté” – add a tablespoon of butter, then melt in the flour and pour the cream on if it is too thick, then add some milk, let it simmer gently and pour into the broccoli broth.
  3. Now you can choose the creaminess yourself. The ginger and garlic add a certain flavor to the soup. Goes quickly, warms and everything is used up.
