Broccoli with mousselin sauce

Ingredients for 4 servings:

  • 450 g broccoli
  • 115 g butter
  • 2 egg yolks
  • 2 tsp lemon juice
  • 1 pinch(s) of cayenne pepper
  • 60 ml whipped cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Steam the broccoli in water for 15 minutes. Meanwhile, melt the butter and heat it until very hot. Add the egg yolks to a water bath over low heat. Gradually add the lemon juice and mix well. Remove from the heat and stir in the hot butter. Add cayenne pepper and heavy cream. Place the broccoli on a serving platter, pour the sauce over it, and serve immediately.
