Cauliflower in Aurora sauce

Ingredients for 4 servings:

  • 2 tbsp butter
  • 2 tbsp flour
  • 250 ml chicken broth
  • ½ tsp salt
  • ¼ tsp white pepper
  • 45 ml whipped cream
  • 3 tbsp tomato paste
  • 750 g cauliflower

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Melt the butter in a small saucepan. Add the flour and cook over low heat for 2 minutes. Add the chicken stock, salt, and pepper and simmer until the sauce thickens. Stir in the heavy cream and tomato paste. Meanwhile, sauté the cauliflower in water until tender. Transfer the cauliflower to a serving dish, pour the sauce over it, and serve immediately.
