Brussels sprouts in cashew cream

Ingredients for 1 servings:

  • 150 g Brussels sprouts, cleaned
  • 50 g leek
  • 50 g cashew nuts
  • 50 g cheese, grated
  • 2 tbsp cream cheese tomato-pepper
  • 5 tbsp water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Heat water in a pan, halve the Brussels sprouts, add them to the pan, and sauté with the lid on for about 10 minutes. Remove the lid, and when most of the water has evaporated, add the leek and sauté for another 5 minutes. Then add the cashews. Add the cream cheese, cover, remove from the heat, and let it melt. Finally, sprinkle the grated cheese over the top, let it melt, and mix to combine.
