Ingredients for 4 servings:

  • 2 stalk(s) leeks
  • 4 tbsp oil (germ oil)
  • 2 packs of potatoes (fried potatoes), ready-made product
  • salt and pepper
  • 100 g cherry tomatoes
  • 200 g Cabanossi
  • 4 eggs
  • 12 tbsp milk
  • Nutmeg, grated
  • Chives for sprinkling

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean and wash the leeks, halve them, and cut them into pieces. Heat the oil in a pan. Add the potatoes from the package and the leeks. Fry for about 5 minutes, turning occasionally. Season with salt and pepper. Wash and halve the tomatoes, slice the Cabanossi, and add both to the potatoes. Whisk together the eggs and milk, season with salt, pepper, and nutmeg. Pour the egg mixture over the potatoes and simmer over low heat until set. Sprinkle with chives.
