Ingredients for 6 servings:

  • 500 g lamb, chopped
  • 4 tbsp olive oil
  • 2 tbsp garlic cloves, chopped
  • 2 green bell peppers
  • 2 red bell peppers
  • 1 cucumber(s)
  • 2 onions
  • 5 beefsteak tomatoes
  • 2 bunches of parsley
  • 150 g couscous
  • 2 lemons, juice
  • 6 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

For the minced lamb, grind the lamb in a food processor if necessary. You can also substitute it with ground beef. Fry the meat in hot oil until crumbly and brown, season with salt and pepper. Remove from the pan and transfer to a large bowl. Add the finely chopped garlic. Finely dice the vegetables and mix them in. Add the finely chopped parsley. Mix the ingredients well with the dry couscous. Mix together the lemon juice, olive oil, and salt and pour over the salad. Let it sit for at least 2 hours. If the salad seems too dry, make up the same amount of sauce and add it a little at a time. You can also mix in some pureed tomatoes (with the skin on) to make it moist and taste fresh. The salad tastes great even without the meat.
