Burgundy Ham – Low-Fat Ham Specialty

Burgundy ham is made from a boneless cut of meat. This is first rolled up and wrapped with twine. The subsequent cooking, curing (addition of red wine in the curing layer) and smoking gives the ham its rather dark crust and typical taste. In addition, it has no rind and hardly any fat. Packaged Burgundy ham cold cuts usually come from cooked, lean ham. It is also mildly cured and lightly smoked.

Origin

Unfortunately, it is not known when the famous ham was invented. It supposedly got its name from being cooked in Burgundy wine and is a Bohemian speciality.

Season

Burgundy ham is available all year round.

Taste

Burgundy ham has a spicy, spicy aroma. Due to the curing, it does not have to be additionally salted during further processing.

Use

Cold and sliced, Burgundy ham makes a delicious sandwich topping. It is often served warm as a roast in a burgundy sauce. Many different types of vegetables taste great with this, such as broccoli, cauliflower, beans or carrots, but sauerkraut is also great.

Storage

Basically, the Burgundy ham should be packed well after purchase and quickly cooled again. The shorter the meat is stored, the better its quality. It can be kept in the fridge for 2-3 days. The cold cuts packed in a protective atmosphere keep a little longer as long as they are sealed. Depending on the manufacturer up to 10 days.

Nutritional value/active ingredients

Cured and smoked ham provides around 118 kcal or 495 kJ per 100 g, around 5 g fat, 0.8 g carbohydrates and, at just under 18 g, has a high content of biologically valuable protein.
