Burning Cherry Sundae

Ingredients for 8 servings:

  • 1,000 g sour cherries
  • 250 g sugar
  • 1 tbsp cornstarch
  • 2 glasses of liqueur (cherry brandy or cherry liqueur)
  • 500 ml ice cream with rum
  • 500 ml ice cream (vanilla)
  • 8 glasses of liqueur (blackcurrant liqueur) or 16 tbsp blackcurrant syrup
  • 8 sugar cubes
  • 2 cl rum (54%)

Instructions

Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes

Wash and pit the cherries, collecting any juice. Bring to a boil with the juice and sugar, then thicken with the cornstarch mixed with water. Let cool and refrigerate for about 1 hour. Then mix with the cherry liqueur. Divide half of the cherries among 8 glasses. Pour rum ice cream over the cherries and cover with cherries. Place scoops of vanilla ice cream on top. Pour 1 glass of blackcurrant liqueur or 2 tablespoons of blackcurrant syrup over each. Soak sugar cubes in rum and place on top. Light the sugar and serve while burning.
