Burnt Walnut Cake

Ingredients for 1 servings:

  • 4 eggs
  • 125 g sugar
  • 100 g walnuts, ground
  • 100 g flour
  • 2 tsp baking powder
  • Cinnamon, to taste
  • 100 g butter, melted
  • 500 g quark
  • 2 tbsp honey
  • 400 ml cream
  • 75 g sugar
  • 1 tbsp honey
  • 100 g walnuts, chopped
  • 1 pinch(s) cinnamon, to taste

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Grease a 26 cm springform pan and chill. Preheat the oven to 180°C (top/bottom heat). Beat the eggs and sugar until creamy. Mix the walnuts, flour, cinnamon, and baking powder, then stir into the egg mixture along with the butter. Pour the batter into the prepared pan. Bake in the preheated oven for about 20-25 minutes. Let it cool on a wire rack. Meanwhile, for the topping, caramelize the sugar and honey, add the walnuts and cinnamon, and toss to coat. Then transfer to baking paper and let it cool. For the cream, mix the quark and honey by hand until smooth. Whip the cream until stiff, fold in, and chill the cream. Now cut the cooled walnut base in half crosswise, place the bottom half on a cake plate. Spread half of the honey cream on top and place the second layer on top. Spread the remaining cream all over and decorate with the caramelized walnuts.
