Butterfly noodles with minced meat and yogurt

Ingredients for 4 servings:

  • 500 g pasta (farfalle), but other pasta will also work
  • 500 g minced beef
  • 4 onions, finely diced
  • 1 tbsp Tomato paste (domates salcasi)
  • 1 tbsp paprika paste (biber salcasi)
  • salt and pepper
  • Paprika powder, sweet
  • 4 tbsp oil
  • 3 cup(s) yogurt, preferably Turkish
  • 3 garlic cloves
  • 2 tbsp butter, hot

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

a Turkish way of enjoying noodles

Pour the yogurt into a bowl and press in the garlic. Season with salt and stir well until the yogurt is creamy. Cook the pasta in plenty of salted water until tender (cook slightly softer than Italian “al dente”). Drain well. Heat the oil in a pan. Briefly fry the onions and add the minced meat. Add salt, pepper, paprika, tomato paste, and paprika and stir until tender. Stir 1 tablespoon of paprika into the hot butter. Transfer the pasta to the plates, top with some of the minced meat mixture, and cover everything with yogurt. Add half a tablespoon of the paprika butter and serve immediately!
