Ingredients for 3 servings:
- ¼ liter buttermilk
- 3 eggs
- 200 g flour
- 1 pinch of salt
- Fat for frying
- 2 grapefruit(s), pink
- 2 grapefruit(s), yellow
- 4 cl orange liqueur
- 1 packet of vanilla sugar
- 2 tbsp sugar
- 100 ml white wine
- 100 ml orange juice
- Cream, sweetened, whipped, for garnishing
- Chocolate shavings for garnishing
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Combine the buttermilk, eggs, flour, and salt in a bowl and mix to form a smooth batter. Heat a little fat in a pan and fry the buttermilk crepes in batches. Remove from the pan and set aside. Peel the grapefruit thinly and carve out the segments with a sharp knife. Squeeze the remaining flesh well and reserve the juice. Drizzle the grapefruit segments with orange liqueur and sprinkle with vanilla sugar. Briefly caramelize the sugar in a pan. Pour in the white wine and orange juice and cook the caramel. Add the grapefruit segments and grapefruit juice to the sauce and heat briefly. Fold the crepes together and warm in the sauce. Arrange decoratively on plates and top with the fruit and sauce. Garnish with whipped, sweetened cream and chocolate shavings and serve immediately.
