Grandma's Waffles

Ingredients for 1 servings:

  • 250 ml milk
  • 2 eggs
  • 40 g sugar
  • 1 pinch of salt
  • 1 pinch of grated lemon peel or a dash of lemon juice
  • 180 g flour
  • 1 tsp baking powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Light, fluffy waffles without margarine or butter

Separate the eggs and beat the egg whites until stiff peaks form. Whisk together the milk, egg yolks, sugar, salt, and grated lemon zest. Sift the baking powder with the flour and add. Fold in the beaten egg whites with a tablespoon. The batter is now ready – it should be relatively runny. Pour the batter into a standard waffle iron in batches and bake the waffles for 2-3 minutes each (depending on the desired browning). Tip: Don’t stack the waffles on top of each other, as otherwise they won’t stay crispy and will become soft.
