Ingredients for 35 servings:

  • 6 tbsp salt
  • 4 tbsp paprika powder, sweet
  • 2 tbsp garlic powder
  • 2 tbsp oregano
  • 2 tbsp white pepper (freshly ground)
  • 2 tbsp cayenne pepper
  • 2 tbsp thyme
  • 2 tbsp onion powder
  • 2 tbsp black pepper (freshly ground)

Working time approx. 10 minutes; Total time approx. 10 minutes

Carefully layer the ingredients one by one into a jar (approx. 150-200 ml – depending on how full the spoon is): 2 tbsp salt, 2 tbsp sweet paprika, 2 tbsp garlic powder, 2 tbsp oregano, 2 tbsp white pepper (freshly ground), 2 tbsp cayenne pepper, 2 tbsp salt, 2 tbsp thyme, 2 tbsp onion powder, 2 tbsp sweet paprika, 2 tbsp black pepper (freshly ground), 2 tbsp salt. The mix will stay aromatic for about 3 months – then it should be used up as much as possible. It goes well with all grilled fish, meat, and vegetables, as well as hearty stews and shellfish; or you can season potato wedges with it = “Cajun fries”; season roast chicken with it = “Cajun chicken”; season shredded meat with it; … – because it contains salt, it is not suitable for marinating meat! Use for frying: Pat fish or chicken fillets (fresh or thawed, evenly thin slices) dry, toss in a little seasoning mix; fry in a heavy pan over high heat for about 2-3 minutes on each side; approx. 2 tablespoons for approx. 3-4 servings of meat/fish. Use for grilling: Rub meat or fish with the mixture, grill immediately.
