Ingredients

  • 200 g Whipped cream
  • 3 cans Mandarin oranges, 312 ml each
  • 4 Eggs
  • 1 pack Vanilla sugar
  • 1 pinch Salt
  • 1 medium Egg yolk
  • 1 medium Organic lime, peel zest
  • 1 pack + 1 tsp baking powder
  • 325 g Sugar
  • 650 g Wheat flour
  • 350 g Butter

Instructions

For the sprinkles:

  • Melt 1,100 g butter, allow to cool, mix 200 g flour, 100 g sugar and 1 teaspoon baking powder.
  • Add the egg yolk, lime zest and melted butter to the flour mixture.
  • First work with the dough hook of the mixer, then with your hands into crumble and chill.

For the dough:

  • Mix 4,250 g butter, salt, 225 g sugar and vanilla sugar until creamy. Mix the eggs, mix 450 g of flour and 1 pack of baking powder and place on top. Stir in together with the whipped cream.
  • Grease the oven's drip pan and dust it with flour. Pour in the dough and smooth it out.

For covering:

  • Drain the mandarin oranges well and distribute them evenly on the dough and sprinkle the crumble on top.
  • Bake the cake in a preheated oven at 175 degrees for about 40 minutes. Let cool completely on a wire rack.
  • Cut the streusel cake into pieces and serve.

Variant:

  • If you want, you can decorate the cake with chocolate. To do this, melt 50 g dark chocolate couverture, fill it in a small freezer bag, cut off a small corner and pull strips onto the cake. Also very tasty!
