Great basic recipe – simple and delicious! This batch makes about 30 pieces.
Mix the butter with salt, vanilla sugar, sugar, and egg until smooth. Combine the flour, baking powder, and ground almonds (or cornstarch) and add to the butter mixture alternately with the milk. Mix the batter into a greased and floured small (20 cm) loaf pan and bake at 180°C (top and bottom heat) for about 30 minutes. Let the cake cool for 10 minutes, then crumble it into a bowl, mix with the room-temperature cream cheese, and chill the mixture. Melt the chocolate coating in a double boiler. Dip 30 wooden skewers 1-2 cm each into the chocolate coating and refrigerate to cool (this will help the cake pops stick better). Now form 30 balls from the cake mixture with your hands and skewer them with the chocolate side of the skewer. Dip the balls on the skewer into the melted chocolate coating. Decorate the finished cake pops and refrigerate. You can also make the cake pops with a marzipan or nougat center. To do this, form a small ball of marzipan or nougat and cover it with the cake mixture. Dip each ball in nougat coating to taste and decorate with nuts or almond slivers. Tip: It’s best to stick the wooden skewers into a Styrofoam plate. If you don’t have one handy, take one or two large empty cardboard egg cartons (closed) and poke holes with the pointed end of the wooden skewer. This makes it easier to place the skewers in the plate so they can cool down in the refrigerator without touching anything. The cake pops also make ideal name cards; simply write the name on the ball in icing and stick the wooden skewer with a flower in it into a napkin or into a small piece of floral foam. The sky’s the limit.
