Cake with Straciatella Cream Low Carb

Ingredients
 

  • 3 piece Eggs
  • 2 tbsp Water
  • 70 g Xucker
  • 80 g Soy flour
  • 5 g Baking soda
  • 500 g Quark 40% fat
  • 15 g Dark chocolate 81%
  • 10 g Desiccated coconut
  • 1 tsp Vanilla extract
  • Fat for baking pan 24cm round

Instructions
 

  • Preheat the oven to 175 degrees.
  • Separate eggs.
  • Beat the egg whites with water and xucker until stiff.
  • Fold in the yolks
  • Mix the soy flour with baking soda and fold in as well.
  • Grease the shape (24cm).
  • Pour the mixture into the mold and bake for 20 minutes.
  • Let cool down well.
  • Halve the cake base horizontally so that you have 2 round plates.
  • Chop the chocolate into small pieces.
  • Mix with quark and vanilla extract.
  • Spread the cream (except for 3 heaping tablespoons) on the bottom cake base and then put the lid on it.
  • Spread the rest of the cream on top and spread the desiccated coconut on top.
  • Cut into 8 equal pieces.
