Canadian apple pancakes

Ingredients for 1 servings:

  • 75 g flour
  • 1 tbsp sugar
  • ½ tsp salt
  • 2 eggs
  • 80 ml cream
  • 80 ml milk
  • 1 tsp vanilla extract
  • 2 tbsp butter
  • 500 g apples (e.g. Braeburn, Granny Smith or similar)
  • 50 g brown sugar
  • 1 pinch of cinnamon
  • some powdered sugar for sprinkling
  • possibly lemon juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Delicious and fluffy

Mix the flour, sugar, and salt together in a bowl. In another bowl, combine the eggs, cream, milk, and vanilla extract; whisk until well combined. Then add the egg and cream mixture to the flour and whisk well. Peel, core, and slice the apples. Heat the butter in an ovenproof skillet (approx. 24 cm). Fry the apple slices, brown sugar, and cinnamon for a few minutes (add a few drops of lemon juice if desired). Quickly pour the batter over the apples in the skillet. Bake in a preheated oven at 220°C for approx. 18 minutes. Sprinkle with powdered sugar before serving.
