Remove the orange segments, chop them into small pieces, sweeten if desired, and chill thoroughly. Carefully remove the seeds from the cantaloupe melon. Pile the orange segment pieces into the resulting hollows and immediately serve with the melon. At the height of her career, Nance O’Neil (1874-1965) was called the “American Bernhardt.” This recipe is hers.
