Caramel – spread for bread or as a filling for cakes or pastries

Ingredients for 1 servings:

  • 1 pack of cream, vegan (soy cream or oat cream)
  • 150 g sugar or agave syrup
  • 1 vanilla pod(s), scraped pulp
  • 30 g margarine
  • 4 tbsp nut butter or 75 g nut flour
  • possibly pudding powder, vanilla

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

vegan, easy, but takes a little longer

Combine all ingredients in a saucepan over medium heat, stirring until smooth. Then simmer on low heat until the mixture turns golden yellow and creamy, about half an hour. Let it cool, stirring occasionally to prevent a skin from forming. If the mixture isn’t creamy and remains too runny, add a little sifted vanilla pudding powder while stirring. Finally, stir in the nut butter or nut flour. I use the cream as a sweet spread, but also in cakes (e.g., with marzipan) or as a pastry filling.
