Caramelized almond broccoli

Ingredients for 3 servings:

  • 1 broccoli
  • 2 tbsp clarified butter (goose fat works too)
  • Sugar
  • salt and pepper
  • 3 tbsp almonds, sliced

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Very tasty with poultry and fish

Remove the broccoli florets and blanch them in salted water for about 5 minutes. Heat clarified butter in a pan, toss the broccoli florets in it, and fry on low heat. (Don’t stir too vigorously, or the florets will fall apart.) Season with salt and pepper. Then remove the broccoli, add a little more clarified butter to the pan, sprinkle in the sugar, and let it caramelize. Deglaze with a little water, add the broccoli again, sprinkle with almonds, and toss briefly. Serve.
