Caramelized and buttered winter applesauce with rum raisins

Ingredients for 4 servings:

  • 1 kg apples, slightly sour
  • 2 tbsp sugar
  • 1 tbsp honey
  • 200 ml apple juice, cloudy
  • Gingerbread spice
  • vanilla sugar
  • Cinnamon powder
  • Clove powder
  • ½ lemon(s), juice
  • 2 tbsp rum
  • 2 tbsp, heaped raisins
  • 1 tsp butter

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 55 minutes

Soak the raisins in the rum and let it steep for at least 30 minutes. Peel and core the apples, and cut them into eighths. Heat the sugar in a saucepan until it begins to caramelize. Immediately add the apples and stir everything together until the sugar is combined with the apples. Now add the apple juice, lemon juice, and spices, cover the pan, and simmer for 5-10 minutes, until the apples are soft. Mash with a masher until the apples have softened. Stir in the honey until the desired sweetness is reached. Stir in the raisins and any remaining rum that hasn’t been absorbed yet. Melt a teaspoon of butter in the warm applesauce and stir. Delicious hot or cold.
