Ingredients for 1 servings:
- 250 g flour
- 1 tsp baking powder
- 90 g sugar
- 1 pinch of salt
- 80 g desiccated coconut
- 130 ml coconut milk
- 1 egg(s)
- 50 ml oil
- 200 g pineapple
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
For 12 muffins
Preheat oven to 170 degrees Celsius (350 degrees Fahrenheit). Combine flour, baking powder, salt, and coconut flakes. In another bowl, combine the coconut milk, egg, sugar, and oil. Add the flour mixture to the coconut milk mixture and mix. Finally, chop the pineapple into small pieces and fold into the batter. Pour the batter into a 12-cup muffin tin and bake for approximately 20-25 minutes.
