Ingredients for 1 servings:
- 175 g almonds, whole and unpeeled
- 250 g flour
- 180 g sugar
- 25 g butter, room temperature
- 2 eggs
- 1 tsp baking powder
- ½ bottle of bitter almond flavor
- 2 packets of vanilla sugar
- 1 pinch of salt
- possibly pistachios
- possibly chocolate (chocolate drops)
Instructions
Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes
Knead all ingredients into a dough and form into a ball. Chill in the refrigerator for about 1 hour. Divide the dough into 6 equal pieces and shape each into a roll about 25 cm long. Place the rolls on a baking sheet about 8 cm apart and bake at 200°C for 10-15 minutes. Once cooled, cut the rolls diagonally into about 1 cm thick slices and bake again at 200°C for another 8-10 minutes. Keep an eye on them, as they burn quickly. You can vary the cantuccini by adding 100 g of pistachios or chocolate chips.
